Friday Food-pizza

 I'm not a huge fan of cooking, but I do enjoy baking. Love those sweets! And, of course, there's the whole eating thing, of which I am a huge fan. So I thought I'd share some of my favorite recipes and cooking hacks.

This week I made pizza dough in my bread machine. This is my 2nd bread machine. The first died after several years from over-use. But it served me well and we parted as friends. And then with the 2020 lockdown and all, and everyone making bread, I had to wait months for my backorder to arrive!

I originally bought it specifically for making homemade pizza dough. I do love my pizza! 90 minutes in the machine and I have 2-3 pizzas for the week.

It takes another, maybe, 15 minutes to roll out the dough and make the pizzas. I use several different cheeses, some with red sauce, some not.

Yes, they're a little smaller but good for freezing! Plus you can add in whatever topping you want. It all freezes well. (OK, everything I've tried freezes well!)

Put the finished pizzas on parchment paper and freeze them on your baking tray for an hour. Once they're frozen, they can go in a container. I use my plastic (Tupperware I think) rectangular cookie container. Fits 4-5 frozen pizzas.

When I need one, I just go into the container, take it out, and bake it! Yes, it takes time originally, but I can do so many other things while the dough is baking or the pizza is freezing, I never feel like it's an all day affair. 


This is the finished product. 400F for ~20 minutes and perfection!
